Notes
- This dish is heavy and fulfilling. Ground beef provides protein, while cooked rice, corn, and tomatoes add carbs and vitamins, making it nutritious and satisfying. The cheese on top melts perfectly into the mixed filling below, adding creaminess and a savory note. The bell peppers are cooked till tender, offering a mild, sweet taste and a very unique grassy note. I consider myself a fan of all types of stuffed bell pepper; that’s why I rate this recipe relatively high on my list.

Ingredient notes:
Choose large, firm bell peppers for easy stuffing. Pick them based on their colors and your preferences. If you like sweeter ones, pick those with 4 lobes and have ripe colors like yellow and red. Green bell pepper will be a little more bitter and less sweet than other colors.
Lean ground beef works the best for this recipe, providing a consistent, balanced base to the filling.
For the rice, you can choose while, brown, or cauliflower rice. The last option is low carb for those who need it.
Expert tips:
Pre-cook the rice before stuffing to ensure even cooking for the filling.
Saute the beef and onion, and remove excess liquid to prevent sogginess, allowing the seasonings to infuse thoroughly.
Quickly blanch the peppers to make them softer before stuffing. This also helps keep the moisture inside.
When baking in the oven, cover them and bake first, then remove the cover and finish baking to avoid drying out.
Serving suggestions:
This dish is kinda heavy, so it’s best to pair it with lighter side dishes like roasted veggies or bread. Common bread works just fine. Slice and toast till crunchy. Garlic bread will be even better, adding aroma and enhancing the flavor of the main dish.
Top the peppers with more grated cheese for the melty, overflowing effect. Garnish with fresh herbal leaves for a pop of color.
FAQs:
Can I use ground turkey instead? Absolutely! Replace beef with turkey for a leaner filling.
Can I freeze the stuffed bell peppers? Yes, put them in zip lock bags or air-tight containers and store them in the freezer. Rebake when serving them.
How to make the filling extra cheesy? If you like to have more cheese, mix shredded cheese directly into the filling. The cheese will melt in the oven and develop a chewy texture in the filling.
