Ingredients

  • 1 lb. salmon skinless and boneless

  • 8 oz. uncooked pasta

  • 6 oz. baby spinach

  • 1 cup heavy cream

  • 1 cup Parmesan cheese grated

  • 1 medium onion chopped

  • 2 garlic cloves minced

  • 2 tbsp. parsley chopped

  • 3 tbsp. butter

  • salt and pepper to taste

Directions

  • Cook pasta according to package instructions.
  • Melt butter in a skillet over medium heat. Add onion and sauté for 4-5 minutes.
  • Add salmon and continue to cook for another 5-7 minutes, breaking it into flakes as it cooks.
  • Stir in spinach and cook it for 1-2 minutes, until wilted.
  • Whisk in heavy cream, Parmesan, garlic, salt, and pepper until combine. Stir and bring to a gentle simmer.
  • Add cooked pasta and chopped parsley. Mix everything together thoroughly.
  • Garnish with parsley and grated Parmesan.
  • Serve!
