Ingredients

  • 3 peppers

  • 1/2 pound breakfast sausage, cooked

  • 1/2 cup cheese, shredded

  • 1 clove garlic, minced

  • 1-2 chopped green onions (2 tablespoons)

  • salt and pepper for taste

Directions

  • Pre-heat oven to 350 degrees F.
  • Cut peppers in half lengthwise, remove seeds, cores and membrane.
  • Add a pinch of salt and pepper into each half. Bake in preheated oven for 20 minutes.
  • Add sausage and garlic in a pan and brown. Set aside.
  • Once peppers are done, stuff with sausage mixture; using a spoon. Top with shredded cheese, and a pinch of chopped green onion.
  • Crack and egg over top of each pepper half. Bake for another 15-20 minutes, until whites of eggs are fully cooked.
  • Remove from oven, let cool for 5 minutes and serve!
