Ingredients

  • 1 pound ground beef

  • 8 ounces cooked rigatoni pasta

  • 2 tablespoons canola oil

  • 2 tablespoons taco seasoning

  • 1 cup onion, diced

  • 1/2 red bell pepper, diced

  • 1 cup corn

  • 1 cup black beans

  • 1 cup cheddar cheese

  • 1 cup beef broth

  • 1 cup tomato sauce

  • 1 cup salsa

Directions

  • Add canola oil, beef, onion and bell pepper to a large skillet. Cook on medium-high until cooked through, about 5-7 minutes; stirring often.
  • Stir in taco seasoning, beef broth, tomato sauce and salsa. Whisk to combine and cook until it thickens, for 3-4 minutes.
  • Add in corn, black beans, cheese and pasta and stir to combine.
  • Remove from heat and let cool slightly. Garnish with fresh chopped parsley, if desired.
