Cauliflower Burger Buns

Looking for an amazing combination of cauliflower and ground beef? These Cauliflower Burger Buns are the way to go. As the name may suggest, they’re burger served on cauliflower buns. Packed with flavors and low in carbs, these buns are a perfect food for low-carb and keto diets. I’m not on these diet but still fall for these burger buns. Yummy!

Drizzled with a flavorful dressing, these cauliflower burger buns taste incredibly good. They’re appealing brunch, lunch and dinner.

Ingredients

  • FOR CAULIFLOWER BUNS
  • 1 large head cauliflower, cut into florets

  • 2 large eggs

  • 1/2 c. freshly grated Parmesan

  • 1 tbsp. cornstarch

  • 1 tbsp. sesame seeds

  • kosher salt

  • Freshly ground black pepper

  • FOR BURGERS
  • 1 lb. ground beef

  • 4 slices cheddar

  • 4 tomato slices

  • kosher salt

  • Freshly ground black pepper

  • vegetable oil

  • Lettuce, for serving

Directions

  • Preheat oven to 425º F and prepare 2 baking sheets lined with parchment paper.
  • Place cauliflower on a box grater, grate and transfer to a large bowl. Microwave on high, for 8 minutes.
  • Remove cauliflower and drain thoroughly with paper towels or a cheesecloth. Add eggs, Parmesan and cornstarch and season with salt and pepper. Mix until combined.
  • Divide cauliflower mixture into eight 4” circles on prepared baking sheets.
  • Sprinkle with sesame seeds and bake until golden, 22 to 25 minutes.
  • To make burgers: Shape ground beef into four large patties. Season both sides of each patty with salt and pepper.
  • Heat a little vegetable oil in a large skillet over medium-high heat. Add patties and cook until cooked to your liking, about 4 minutes per side for medium.
  • During the last minute of cooking, top each patty with a slice of cheese and cover the skillet with a lid to melt cheese.
  • Assemble burgers on cauliflower buns with tomato and lettuce. Enjoy!
