Ingredients

  • 2 zucchini

  • 1/4 pound turkey sausage, casing removed

  • 1/4 pound ground turkey

  • 1 tablespoon tomato paste

  • 1 teaspoon oregano

  • 1 teaspoon Italian seasoning

  • 1 cup shredded cheddar cheese

  • 4 teaspoons olive oil

  • 1/2 green pepper

  • 1/2 onion

  • 2 cloves garlic

  • basil and paprika (optional)

Directions

  • Preheat oven to 350 degrees F.
  • Cut zucchini evenly in half. Scoop out insides with a spoon, put into a bowl, and set aside for later.
  • Place zucchini boats on a baking sheet lined with foil, season with salt and pepper, and bake for 10 minutes.
  • Heat 2 teaspoons of olive oil in a large skillet over medium high heat, add ground turkey, and turkey sausage. Season with salt and pepper; breaking apart, cook for 5 minutes. Remove and set aside.
  • Add remaining olive oil to pan. Add onion, green pepper, and garlic. Season with salt and pepper, cook until veggies are soften, about 3 minutes.
  • Return turkey to skillet, along with zucchini meat, tomato paste, oregano, and Italian seasoning. Stir until thoroughly combined, and season with salt and pepper, to taste.
  • Turn off heat and add most of your cheese. Reverse some for topping later. Stir to well combined.
  • Scoop turkey mixture evenly into the zucchini halves. Sprinkle with remaining cheese, and bake for 10 minutes
  • Remove from oven and let cool for a few minutes. Serve!
