1 pound ground beef
8 ounces cooked rigatoni pasta
2 tablespoons canola oil
2 tablespoons taco seasoning
1 cup onion, diced
1/2 red bell pepper, diced
1 cup corn
1 cup black beans
1 cup cheddar cheese
1 cup beef broth
1 cup tomato sauce
1 cup salsa
Directions
- Add canola oil, beef, onion and bell pepper to a large skillet. Cook on medium-high until cooked through, about 5-7 minutes; stirring often.
- Stir in taco seasoning, beef broth, tomato sauce and salsa. Whisk to combine and cook until it thickens, for 3-4 minutes.
- Add in corn, black beans, cheese and pasta and stir to combine.
- Remove from heat and let cool slightly. Garnish with fresh chopped parsley, if desired.
