Ingredients

  • 4 medium zucchini, cut in half and seeds removed

  • 1 19 oz. can chickpeas, rinsed and drained

  • 1/4 cup nutritional yeast

  • 1/2 cup pasta sauce of choice

  • pinch of salt and pepper

Directions

  • Pre-heat oven to 425 degrees F. Prepare a baking pan and set aside.
  • Place zucchini halves on baking pan.
  • Pulse chickpeas a few times in a food processor or blender until mostly broken down
  • Pour in a bowl and stir in sauce and nutritional yeast until well combined.
  • Divide mixture between 8 hollowed-out zucchini halves.
  • Sprinkle with a little sea salt and black pepper.
  • Bake in preheated oven for 20-25 minutes, until zucchini is tender and mixture is browned.
  • Serve!
