Ingredients

  • 1 pound beef, thinly sliced

  • 4 cups cooked white rice (short grain or medium grain preferred)

  • 4 eggs

  • 2 tablespoons mirin

  • 2 tablespoons soy sauce

  • 1 cup dashi stock (or beef or chicken stock)

  • 1 scallion, chopped

  • 2 medium onions, thinly sliced

  • 2 teaspoons sugar

  • Neutral oil, vegetable or canola oil

  • 2 teaspoons toasted sesame seeds (optional)

Directions

  • Heat 2 tablespoons oil in a large skillet over medium high heat. Add onion and cook for about 10 minutes, stirring often.
  • Add beef and sugar, stir-fry until beef is slightly browned.
  • Stir in mirin, soy sauce, and stock. Bring to a simmer, and cook for about 10-15 minutes until gets your desired thickness. Taste for seasoning, if needed.
  • Heat another couple tablespoons of oil in a cast iron or non-stick skillet. Crack eggs and cook until yolks are still runny.
  • To assemble, divide the rice between 4 bowls. Top each with beef and an egg. Garnish with chopped scallion and toasted sesame seeds, if preferred.
  • Serve immediately!
