Italian Sausage Zucchini Boats

These Italian Sausage Zucchini Boasts are my new favorite! Zucchini is cut in half, lengthwise, hollowed out, filled with cooked mixture of sausage, onion powder, zucchini flesh and tomatoes, covered with breadcrumbs, followed by grated parmesan cheese, then baked in the oven. The food is ready to serve when zucchini is tender and cheese is melted and bubbly. Who can resist it? My family can’t.

Along with easy preparation, these zucchini boats are also quick to cook. Spend 20 minutes, and you have a savory and flavorful stuffed zucchini to treat the whole family. So short to any homemade meal, right? You can have them for busy dinner or week days or gatherings at the weekend. It really depends.

My kids no longer want roasted and baked zucchini dipped with a sauce, so, I turn it into stuffed dishes. These Italian Sausage Zucchini Boasts are my new favorite! Zucchini is cut in half, lengthwise, hollowed out, filled with cooked mixture of sausage, onion powder, zucchini flesh and tomatoes, covered with breadcrumbs, followed by grated parmesan cheese, then baked in the oven.

Ingredients

  • 4 medium zucchini, cut in half, lengthwise

  • 16 oz. mild Italian sausage

  • 1/2 cup grated Parmesan

  • 1/2 cup Mozzarella, shaved

  • 1 tsp minced garlic

  • 1/4 tsp onion powder

  • 2 medium tomatoes, chopped

  • 1/4 breadcrumbs

  • salt & pepper

  • 1 tbsp. olive oil

  • 2 tbsp. parsley, chopped

Directions

  • Preheat oven to 400 degrees F. Prepare a 9×13 pan.
  • Scoop out interior flesh from zucchini and save for later; using a spoon. Place zucchini in baking pan.
  • Heat olive oil in a medium pan over medium-high heat. Add sausage and garlic, fry until brown. Add onion powder, zucchini flesh, tomatoes, salt and pepper. Cook for 4-5 minutes.
  • Scoop sausage mixture into zucchini boats. Sprinkle with breadcrumbs and cheeses.
  • Bake in preheated oven for 20-22 minutes.
  • Enjoy!
