Ingredients

  • 4 large bell peppers (red, orange, yellow, green), halved, ribs and seeds removed

  • 1 1/2 cups shredded mozzarella cheese

  • 2 ounces pepperoni slices

  • 2 ounces Canadian bacon slices

  • 4 button mushrooms, sliced

  • 1 cup Low Carb Pizza Sauce

  • 1/2 cup grated Parmesan cheese

  • 1 tablespoon Italian seasoning

  • 10 black olives, sliced

  • 1/3 cup diced onion

Directions

  • Preheat oven to 400°F. Prepare a baking sheet lined with parchment paper.
  • Place peppers face up on baking sheet and bake on middle rack for 15 minutes. Once done, remove and drain any excess moisture.
  • To assemble, sprinkle 1 tablespoon of mozzarella into bottom of each pepper half, followed by 2 tablespoons of pizza sauce.
  • Top evenly with pepperoni, Canadian bacon, mushrooms, olive and onion.
  • Sprinkle with 2 tablespoons of mozzarella cheese.
  • Return to oven and bake on top rack for another 10 minutes.
  • Remove and top each with 1 tablespoon of Parmesan and a sprinkle of Italian seasoning.
  • Bring back to oven and broil 5 minutes.
  • Serve!
