Ingredients

  • 2 slices crusty bread

  • 4 oz. fresh Ricotta cheese

  • 1 avocado

  • 1 1/2 c. cherry tomatoes, halved

  • ¼ tsp. salt

  • Fresh cracked pepper

  • 1/2 tbsp. fresh thyme leaves, destemmed

  • 1/2 tbsp. olive oil

  • Salt and pepper to taste

  • Dash of fresh cracked salt and pepper

Directions

  • Turn on the broiler of the oven. Place bread on a baking sheet and toast lightly for 2 minutes on each side.
  • Gather ricotta cheese, salt and pepper in a mixing bowl. Stir to well combined. Spread the mixture evenly onto each bread slice.
  • Peel avocado and remove pit. Mash with a fork until combine. Spread on top of ricotta cheese.
  • Combine sliced tomatoes, fresh thyme, olive oil, salt and pepper in a medium bowl. Spoon onto avocado toast.
  • Enjoy with a favorite hot sauce.
