Ingredients

  • 3 green bell peppers, cut in half, seeds and core removed

  • 1 lb. beef, sliced into thin strips

  • 1 lb. mushrooms, finely chopped

  • 12 slices Provolone cheese

  • 1 onion, finely diced

  • oil for cooking

  • salt & pepper to taste

Directions

  • Preheat oven to 400℉. Prepare a baking dish and set aside.
  • Heat some in a skillet over medium-high heat. Add mushrooms and cook until slightly browned.
  • Add onions and cook until golden brown. Remove skillet and set aside.
  • Add beef to skillet and cook until brown, stirring often.
  • Bring mushroom back to skillet. Season with salt and pepper to taste.
  • Place one slice of cheese at bottom of each pepper half. Stuff with beef and mushroom mixture, and top with another slice of cheese. Place one slice of cheese on the inside of peppers, top it off with beef mixture and cover with cheese.
  • Place peppers in baking dish and bake for 25 minutes until peppers are tender and cheese is melted.
  • Remove from heat, let cool for 5-7 minutes and serve!
