Ingredients

  • For Salmon
  • 8oz/ 250g salmon filet

  • 1 cup broccoli florets

  • 1/2 tsp crushed red pepper

  • 2 garlic cloves, minced

  • 2 tbsp. olive oil

  • 1 tsp basil, dry

  • For Salad
  • 1 cup lettuce, chopped

  • 2/3 cup purple cabbage, chopped

  • 1/4 cup feta cheese, crumbled

  • 10 olives, pitted

  • 1 tbsp. lemon juice

  • handful basil leaves

  • 2 tbsp. hummus or

  • low carb hummus

Directions

  • Rub salmon with dried basil, crushed red pepper flakes, and 1 clove garlic. Let it rest for a few minutes.
  • Add chopped cabbage in a large bowl and massage with lemon juice. Add lettuce, basil, olive oil, feta cheese and 1 clove of minced garlic. Mix to well combined and season with salt and pepper, if needed.
  • Heat 1 tbsp. olive oil in a non-stick pan over medium-high heat. Add broccoli and stir fry for 2 minutes. Turn off heat and covered with a lid for a few minutes. Remove and set aside.
  • Add salmon to skillet. Cover with a lid and cook over medium/medium high; flipping half-way through, for 6-7 minutes.
  • To assemble, divide salad among 2 serving bowls. Tops with salmon, olives, hummus and broccoli. Season with salt and pepper to taste, if needed.
  • Serve immediately!
