This Mediterranean Style Breakfast Toast is my new favorite! I first tried this toast two weeks ago. One of my colleague brought this for brunch as she did not have enough time for breakfast that day. She invited me to try one and I fell for it right. It’s flavorful and quite clean-eating, too me. I do not hesitate to ask her for the recipe to turn it into my homemade breakfast. I give I a try and it works so well.

So, what are these Mediterranean breakfast toasts? They are slices of whole grain (or whole wheat) bread evenly spread with hummus, sprinkled with Za’atar spice, topped with arugula, sliced cucumber and tomatoes, covered with chopped olives and crumbled feta cheese. It takes only 10 minutes to make these toast. A minimum amount to have any good breakfast, right?

So, what are these Mediterranean breakfast toasts? They are slices of whole grain (or whole wheat) bread evenly spread with hummus, sprinkled with Za’atar spice, topped with arugula, sliced cucumber and tomatoes, covered with chopped olives and crumbled feta cheese.

Ingredients

  • 4 thick slices whole grain (or whole wheat bread of choice)

  • Handful baby arugula

  • 1 cucumber, sliced

  • 1 to 2 Roma tomatoes, sliced

  • 2 tbsp. chopped olives

  • Sprinkle crumbled feta cheese

  • 1/2 cup hummus

  • Za’atar spice, blended

Directions

  • Toast bread slices in the broiler of the oven, according to its thickness.
  • Spread 2 tablespoon of hummus evenly onto each toast.
  • Sprinkle with Za’atar spice.
  • Cover with arugula, cucumber and tomatoes.
  • Add chopped olives and then crumbled feta cheese on top. Enjoy!
