Ingredients

  • 15oz. can chickpeas, drained and rinsed

  • 1/2 tablespoon melted coconut oil

  • kosher salt

  • freshly ground black pepper

Directions

  • Preheat oven to 400°F convection roast.
  • Spread chickpeas out on a dish lined with a paper towel, gently pat dry.
  • Peel skins off chickpeas. Spread out on a baking sheet and roast for 10 minutes, shaking once so they don’t stick.
  • Remove chickpeas and pour coconut oil mixture over top. Season with salt and pepper, toss to evenly coated.
  • Bring baking sheet back to oven and roast for 12 minutes more, tossing once half way through.
  • Turn oven off, let chickpeas cool in oven cool with baking sheet still for at least 10 minutes.
  • Serve immediately!
