Ingredients

  • For Sicilian-style Salmon
  • 100g/3½oz salmon fillet, skin removed

  • ½ tsp dried chili flakes

  • 1 tsp ground paprika

  • 1 lime, juice only

  • olive oil, for drizzling

  • salt and freshly ground black pepper

  • For Mushrooms and Broccoli
  • 100g/3½oz button mushrooms, sliced

  • 100g/3½oz broccoli, chopped

  • 1 tbsp. olive oil

  • 1 garlic clove, finely chopped

  • 2 tbsp. chopped fresh parsley, optional

Directions

  • Preheat oven to 180 degrees C. Lightly grease a baking dish with oil.
  • Place salmon fillet onto baking tray. Drizzle all over with lime juice and a little olive oil. Sprinkle with chili flakes and paprika. Season with salt and pepper.
  • Bake for about 10 minutes, or until cooked through.
  • Heat a tablespoon of oil in a frying pan. Add mushrooms and stir-fry for 5 minutes. Add broccoli and stir-fry until cooked to your liking.
  • Add garlic and fry for 1 minute, then stir in parsley.
  • Serve immediately with salmon!
