4 pound chicken, cut into 8 pieces and backbone discarded
2 cups buttermilk
2 cups flour
1 teaspoon paprika
1 tablespoon kosher salt
2 teaspoons coarse ground black pepper
2 tablespoons hot sauce (optional)
canola oil, for frying
Directions
- Add chicken pieces, buttermilk, salt, pepper and hot sauce to a large bowl. Mix to combine and chill in the fridge at least 4 hours.
- Combine paprika with flour in a medium bowl. Prepare a baking sheet laid next to it.
- Remove chicken from buttermilk, coat well with flour, then place onto baking sheet Let it rest for at least 30 minutes.
- Heat a large Dutch oven 1/2 full with canola oil to 365 degrees.
- Add chicken, in batches, and fry for 10-12 minutes until crispy and cooked through.
- Remove from oil, transfer to a plate lined with paper towel or place on wire rack.
- Serve immediately!
