Ingredients

  • 4 pound chicken, cut into 8 pieces and backbone discarded

  • 2 cups buttermilk

  • 2 cups flour

  • 1 teaspoon paprika

  • 1 tablespoon kosher salt

  • 2 teaspoons coarse ground black pepper

  • 2 tablespoons hot sauce (optional)

  • canola oil, for frying

Directions

  • Add chicken pieces, buttermilk, salt, pepper and hot sauce to a large bowl. Mix to combine and chill in the fridge at least 4 hours.
  • Combine paprika with flour in a medium bowl. Prepare a baking sheet laid next to it.
  • Remove chicken from buttermilk, coat well with flour, then place onto baking sheet Let it rest for at least 30 minutes.
  • Heat a large Dutch oven 1/2 full with canola oil to 365 degrees.
  • Add chicken, in batches, and fry for 10-12 minutes until crispy and cooked through.
  • Remove from oil, transfer to a plate lined with paper towel or place on wire rack.
  • Serve immediately!
