Veggie Tortilla Roll Ups

They are such a super tasty and flavorful mixture (filling) that will melt in your mouth right away.
I first tasted these veggie tortilla pinwheels when I was invited to a weekend gathering at my friend’s house. She treated us with these and we actually fell in love with them. They are flavorful and super impressive. That’s why I asked her for the recipe to try at home. It’s really worth! I made these for last weekend’s meals and these really got us hooked. They became tastier when dipped into a flavorful sauce. Yummy!

Veggie Tortilla Roll Ups have an irresistible ranch flavored cream cheese filling that makes a great after school snack or appetizer.
1 cup broccoli, finely chopped
1 cup cauliflower, finely chopped
1 cup carrots, finely chopped
1 8 oz. cream cheese block, softened
1 cup sour cream
1 package ranch dressing mix
1 cup shredded Cheddar cheese
1 package large 10-inch tortillas, room temperature
- Blend cream cheese, sour cream and ranch dressing mix with an electric mixer. Add in broccoli, cauliflower, carrots and shredded cheese; and mix together.
- Spread the cream cheese mixture evenly over the tortillas and roll them up tightly.
- Cover and chill them in the refrigerator for at least 30 minutes.
- Use a knife and cut them into 1/2 inch slices. Serve.
