Ingredients

  • 2 pounds side wild salmon fillet

  • 2/3 cup grated parmesan cheese

  • 2/3 cup plain breadcrumbs

  • 4 cloves garlic, minced

  • 1/4 cup finely chopped parsley

  • 1/3 cup melted butter

  • Salt and pepper

  • Lemon wedges, to serve

Directions

  • Place a rack in the middle of oven. Preheat oven to 400°F. Prepare a baking sheet lined with foil.
  • Place salmon onto baking sheet, skin side down and set aside.
  • Add breadcrumbs, parmesan cheese, parsley and garlic to a small bowl. Whisk to combine. Pour in melted butter; season with 3/4 teaspoon salt and 1/3 teaspoon pepper (or to taste). Mix until breadcrumbs absorb butter, about 40 seconds; using your hands or a wooden spoon.
  • Pour mixture over salmon, pressing it into top until completely covered. Lightly spray with cooking oil spray for a golden crumb.
  • Bake uncovered for 12-15 minutes (may be longer, depending on thickness of salmon fillets), until crust is golden and salmon is cooked through.
  • Serve with lemon wedges and a squeeze of lemon, if desired. Pair with a salad, steamed vegetables, rice or mashed potatoes.
