This Roasted Pineapple Whipped Ricotta Toast is an “irresistible” breakfast of my family. My kids go crazy for it right after tasting it. The reason is not because they like toast. Toasted bread slices are evenly spread with blended ricotta, topped with pineapple rings (drizzled with honey then baked in the oven until super golden and caramel), and sprinkled with sea salt and fresh mint. Ready to serve.

Ingredients

  • 6 pineapple rings or 1 cup chopped pineapple

  • 1/2 cup ricotta cheese

  • 4 slices of your favorite bread, toasted

  • 2 to 3 tbsp honey plus extra for drizzling

  • a handful of fresh mint leaves

  • sea salt for sprinkling

Directions

  • Preheat oven to 450 degrees F.
  • Line a baking sheet with parchment paper. Place pineapple on the sheet and Drizzle with honey.
  • Roast for 15 to 20 minutes, until super golden and caramely. You can bake in in the broiler for a minutes if desired.
  • Add ricotta to a food processor and blend until it’s smooth and creamy. Spread evenly over the toast! Place pineapple on top and sprinkle it with sea salt and fresh mint. Drizzle with extra honey if desired. Enjoy!
