Smashed Blackberry & Goat Cheese Toasts

These Smashed Blackberry & Goat Cheese Toasts are insanely good and super duper impressive, making our toast meals more appealing. They are now one of the most favorite foods of my family, especially my kids. We love them for breakfast, snack, brunch and lunch. My kids sometimes bring these to picnics and game day celebrations at school. Yummy!

Bread slices are lightly toasted, then generously spread with goat cheese, and finally topped with mashed blackberry mixture of blackberries, blueberries, vanilla, sugar, water and cornstarch. Then, ready to serve. These grasp our eye with the color of the blackberry mixture and satisfy our taste buds with their tastes and flavors. Your new day would be full of pleasure when treated with these toasts for breakfast.

My kids are no longer want simple toast and a glass of milk for breakfast. It’s boring. Then these smashed blackberry and goat cheese toasts come to me. Ingredients

  • 1 1/2 cups blackberries

  • 1/2 cup blueberries

  • 8 oz challah bread, sliced (or your bread of choice!)

  • 4 oz goat cheese

  • 1 tsp vanilla

  • 1 1/2 tbsps sugar

  • 3 tbsps water

  • 1 – 2 tsps cornstarch, sifted

  • fresh mint to garnish

Directions

  • Combine blackberries, blueberries, vanilla, sugar, and water in a medium saucepan on medium heat.
  • Once simmering and the fruit begins to burst (about 5 minutes), gently mash with a fork or potato masher, then whisk in the cornstarch until well incorporated. Cover with a lid and cook until it gets your desired thickness.
  • Toast bread until crispy. Smear with a thick layer of goat cheese, then spread with smashed blackberry mixture. Garnish with mint and enjoy!
