Caprese Avocado Toast

This Caprese Avocado Toast is a crave-worthy breakfast! We fall for it right tasting it for the first time. It’s loaded with flavors and looks impressive. My kids love it for snack, brunch, and lunch. They also sometimes bring it to game day celebrations at school. My husband? He is a loyal fan of homemade food. He enjoys all the foods that I make every day. This means a lot to me, and my cooking!

Bread slices are lightly toasted, and evenly spread with mashed avocado mixture of avocado, lemon juice, sea salt and black pepper. They are then topped with fresh mozzarella slices, tomatoes and basil. These toasts will be incomplete without any drizzle of balsamic glaze on top. Ready to serve! It takes you only 10 minutes to make this toast. This would be the minimum amount to make any food at home, right?

Since my kids are treated with this Caprese avocado toast for breakfast, they has got excitement to get out of the bed in the morning. My husband and I don’t need to wake them up any more. Ingredients

  • 4 slices bread, toasted

  • 2 ripe avocados

  • 4 oz. fresh mozzarella, sliced and cut into pieces

  • 1 cup grape tomatoes, halved

  • 2 tsp fresh lemon juice

  • 1/4 cup basil leaves, roughly chopped

  • Sea salt and black pepper to taste

  • Balsamic Glaze for drizzling

Directions

  • Cut avocado in half, remove pit, and scoop lesh into a small bowl. Add lemon juice, sea salt, and black pepper, to taste. Mash with a fork until slightly chunky.
  • Spread mashed avocado evenly onto toasted bread slices. Top with fresh mozzarella slices, tomatoes, and basil. Season with salt and pepper, if desired. Drizzle with balsamic glaze and serve immediately.
  • I love eating whole grain bread. If you prefer gluten-free bread, feel free to give it a try.
