Cauliflower Waffles

This post is about a super heathy and flavorful breakfast, lunch and dinner. Cauliflower Waffles. To me, they’re one of the cutest ways to eat cauliflower. Cauliflower is grated, mixed with cauliflower, cheeses, eggs, cornstarch and paprika, salt and pepper, poured into a preheated waffle press, and cook for 6 minutes. They’re great to serve on their own or paired with toppings of your choice.

These cauliflower waffles are my new favorite. They’re a staple food for every Saturday lunch of my family.

Ingredients

  • FOR THE WAFFLES
  • 3 c. cauliflower, grated

  • 3 large eggs

  • 1/4 c. cornstarch

  • 3 c. shredded mozzarella

  • 1/2 c. finely shredded Parmesan

  • 1 tsp. paprika

  • kosher salt

  • Freshly ground black pepper

  • FOR BREAKFAST STYLE
  • 1 fried egg

  • kosher salt

  • Freshly ground black pepper

  • 1 tbsp. fresh chopped chives

  • FOR AVOCADO TOAST STYLE
  • 1/2 avocado, mashed

  • Squeeze of lemon

  • Drizzle of extra-virgin olive oil

  • Flaky salt

  • chili flakes

  • FOR BLT STYLE
  • 3 slices bacon

  • 1 piece lettuce

  • 2 large slices tomato

  • 2 tsp. mayo

  • kosher salt

  • Freshly ground black peppe

Directions

  • Preheat your waffle press.
  • Add cauliflower, cheeses, eggs, cornstarch and paprika to a large bowl. Whisk until combined. Season with salt and pepper.
  • Pour 1 cup batter into a preheated waffle press, and cook for 6 minutes.
  • Serve on their own or with toppings of your choice.
