Baked Parmesan Asparagus Fries

1 lb. asparagus, stalks trimmed
1/2 cup shredded parmesan cheese
2 cups panko bread crumbs
1/3 cup all-purpose flour
2 large eggs, whisked
cooking oil spray
Directions
- Preheat oven to 375°F. Line a three-quarter baking sheet with parchment paper. Spread panko crumbs, in a thin layer, onto baking sheet. Spray with cooking oil spray.
- Bake for about 5 minutes or until golden. Remove from oven and let cool. Increase oven temperature to 425°F.
- Once bread crumbs are cooled, mix in 1/2 cup parmesan cheese, spread out mixture evenly onto baking sheet again. Line a separate three quarter baking sheet with parchment paper.
- Add whisked eggs and flour into 2 separate shallow bowls.
- Working one by one, dip asparagus lightly in egg, shake off excess; then coat in flour, shake off excess; finally dredge in panko mixture.
- Place coated asparagus onto empty lined baking sheet. Repeat with remaining asparagus.
- Bake for 10-12 minutes, or until asparagus is cooked and outside coating is crispy. Serve with dipping sauce of your choice. Enjoy!
