Cheesy Enchilada Stuffed Peppers

Bell peppers are removed off tops, hollowed out, then filled with a crazy good mix of ground beef, onion, taco seasoning, enchilada sauce, green chile, and shredded cheese. These are finally topped with more cheese, and baked until cheese is melted and peppers are tender.
Ingredients
4 large bell peppers
1 lb lean ground beef
1/4 cup Red Enchilada Sauce Medium
2 cups Mexican blend cheese, shredded
1 can chopped green chiles 4.5 ounce can
1 ounce Taco seasoning
1/2 onion, diced
Directions
- Preheat oven to 350 degrees F. Line a baking sheet with foil and set aside.
- Heat ground beef in a medium skillet over medium high heat, cook until brown; crumbling often. Drain extra oil.
- Stir in taco seasoning and stir until well coated. Toss in onions, stir to combine.
- Once beef is almost cooked through and onions become translucent, stir in green chiles and enchilada sauce. Turn off heat. Set aside.
- Cut tops off peppers and hollow out the inside; remove ribs and seeds. Place on baking sheet.
- Stuff each pepper with beef mixture, followed by half cup of cheese. Top with another 1/2 cup cheese and place top back on the pepper
- Bake in preheated oven for 30-40 minutes, until peppers are tender and cheese is melted.
- Serve immediately with sour cream and cilantro, if desired.
