4 medium zucchini, cut in half and seeds removed
1 19 oz. can chickpeas, rinsed and drained
1/4 cup nutritional yeast
1/2 cup pasta sauce of choice
pinch of salt and pepper
Directions
- Pre-heat oven to 425 degrees F. Prepare a baking pan and set aside.
- Place zucchini halves on baking pan.
- Pulse chickpeas a few times in a food processor or blender until mostly broken down
- Pour in a bowl and stir in sauce and nutritional yeast until well combined.
- Divide mixture between 8 hollowed-out zucchini halves.
- Sprinkle with a little sea salt and black pepper.
- Bake in preheated oven for 20-25 minutes, until zucchini is tender and mixture is browned.
- Serve!
