Chinese Honey Chicken

1 pound chicken breast, cut into 1-inch thin chunks
4 large egg whites
3/4 cup cornstarch (or Mochiko Sweet Rice Flour)
2 tablespoons sweetened condensed milk
1/3 cup water
1/2 cup mayonnaise
1/4 cup honey
vegetable oil, for frying
Directions
- Add egg whites in a bowl and whisk until foamy, about 1-2 minutes.
- Whisk in cornstarch and water until combined. Add chicken and dip to coat evenly.
- Heat 3 inches of oil in a large pot on medium-high heat (to 350 degrees).
- Carefully drop chicken, in batches, and fry until golden brown, about 2-3 minutes per batch.
- Combine mayonnaise, honey and sweetened condensed milk to a large bowl. Add fried chicken and toss to well combined.
- Garnish with parsley, if desired. Serve immediately!
