4 pounds shrimp, peeled
2 cups mayonnaise
2 teaspoons Dijon mustard
2 tablespoons white wine vinegar
1 red onion, minced
3 stalks minced celery, minced
1 lemon, cut into quarters
1/2 teaspoon coarse ground black pepper
2 tablespoons dill
1 teaspoon kosher salt
Directions
- Bring 8 cups of water, salt and lemon to a boil. Add shrimp and for 2-3 minutes. Remove and place in a pot of ice water. Drain and peel.
- Add mayonnaise, mustard, wine or vinegar, 1 teaspoon salt, pepper, and dill to a large bowl. Stir to well combine.
- Add peeled shrimp in creamy mixture. Add red onion and celery and adjust seasonings as need.
- Serve immediately or chill in fridge for a few hours.
