4 chicken breasts
4 ounces cream cheese, softened
¼ cup grated Parmesan
2 tbsp. mayonnaise
1 ½ cups chopped fresh spinach
1 tablespoon olive oil or avocado oil
1 tsp paprika
¼ tsp garlic powder
¼ tsp onion powder
1 tsp garlic, minced
½ tsp red pepper flakes
1 tsp salt, divided
Directions
- Preheat oven to 375 degrees F. Prepare a 9×13 baking dish.
- Lay chicken breasts on a cutting board and drizzle with oil.
- Combine paprika, 1/2 teaspoon salt, garlic powder, and onion powder in a small bowl. Sprinkle evenly over both sides of chicken.
- Cut a pocket into side of each chicken breast; using a sharp knife. Set aside.
- Gather cream cheese, Parmesan, mayonnaise, spinach, garlic, red pepper and remaining ½ teaspoon of salt in a small mixing bowl. Stir well to combine.
- Scoop spinach mixture into each chicken breast evenly.
- Place chicken breasts onto baking dish. Bake, uncovered, for 25 minutes or until chicken is cooked through.
- Once done, remove from oven and let cool for 4 minutes. Serve!
