- For Cauliflower
1 medium head of cauliflower, washed and broken or cut into bite-sized pieces
2 cup edamame beans, shelled and defrosted if frozen
1 avocado, cut into chunks or slices
1 ¼ cup panko bread crumbs
¼ cup + 2 tbsp. flour
2 eggs
½ tsp salt
¼ – ½ tsp pepper
¼ cup avocado oil
- For Sauce
1 tsp sriracha
1 ½ tbsp. soy sauce
1 tbsp. cornstarch
1 clove garlic, minced or grated
2 tbsp. honey
6 tbsp. warm water
- For Garnish
green onion, sliced
sesame seeds
red pepper flakes
Directions
- Preheat oven to 425 degrees F. Line two baking sheets with parchment paper. Brush with 1 tbsp. oil and set aside.
- Prepare 2 separate shallow dishes. One for whisked eggs. One for half of panko bread crumbs, flour, salt and pepper.
- Dip cauliflower, 4-5 pieces at a time, into egg mixture, shake off excess; then dredge into panko mixture to coat.
- Place breaded cauliflower onto baking sheet and bake for 25 minutes. Remove, flip over, and push to one side of baking sheet. Add edamame beans to the other side. Return to oven and bake for 5-10 minutes.
- Combine all ingredients for sauce to a microwave safe bowl. Whisk with a fork until cornstarch is completely dissolved.
- Cover and microwave for 1 minute. Remove and stir, and heat for 30 seconds until sauce has thickened up.
- To assemble, add layers of rice, or base of your choice, then top with cauliflower, edamame, sauce, and finish with avocado.
- Serve immediately!
