Crispy Pan Fried Brussel Sprouts

1 lb. brussels sprouts, sliced in half
4 slices bacon
2 tbsp. balsamic vinegar
3 tbsp. olive oil (not extra virgin)
3/4 tsp sea salt
1/4 tsp black pepper
Directions
- Place bacon slices into a saute pan, fry on medium heat for a few minutes on each side, until crispy.
- Transfer to a plate lined with paper towel to drain and set aside. Reserve grease in pan. Once bacon is cool enough to handle, finely chop.
- Add 2 tbsp. olive oil to pan and swirl around. Add brussels sprouts, season with sea salt and black pepper, and stir to distribute.
- Increase heat to medium-high. Arrange brussels sprouts in a single layer and sear for about 3-4 minutes, without moving, until well browned on the bottom. Flip over and sear the other side.
- Add balsamic vinegar and remaining 1 tbsp. olive oil to pan. Cover and cook for 2-3 minutes more.
- Bring chopped bacon back to pan. Toss to combine and serve immediately!
