Garlic Mushroom Toast with Herbed Ricotta Spread

6 slices of rustic-style bread
2 (8 oz) packages sliced crimini mushrooms
¼ cup white wine
3 tbsp. unsalted butter
4 cloves garlic, pressed through garlic press, plus 1 whole clove, peeled, divided use
2 tsp thyme leaves
Salt
Black pepper
Thyme leaves, for garnish
- Herbed Ricotta Spread
½ cup whole milk ricotta cheese
½ cup whipped cream cheese
¼ cup parmesan cheese, grated
1 tbsp. chives, minced
1 tbsp. flat-leaf parsley, chopped
1 tbsp. thyme leaves, minced
Pinch salt
Pinch black pepper
Directions
- Melt some butter in a heavy bottom skillet (or pan) over medium-high heat. Add mushrooms and stir fry for about 7-8 minutes; until golden brown.
- Stir in wine, and cook until it has reduced (about 30 seconds). Add pressed garlic thyme, stir to combine. Season with salt and pepper to taste. Set aside and keep warm.
- Toast the bread lightly. Rub the remaining whole clove of garlic over each slice.
- Herbed Ricotta Spread
- Gather all ingredients in a medium-size bowl. Mix until smooth and completely combined; using a spatula.
- Spread Ricotta spread evenly onto each bread slice. Top with sauteed mushrooms and garnish with a little addition thyme. Enjoy!
