- For Salmon
8oz/ 250g salmon filet
1 cup broccoli florets
1/2 tsp crushed red pepper
2 garlic cloves, minced
2 tbsp. olive oil
1 tsp basil, dry
- For Salad
1 cup lettuce, chopped
2/3 cup purple cabbage, chopped
1/4 cup feta cheese, crumbled
10 olives, pitted
1 tbsp. lemon juice
handful basil leaves
2 tbsp. hummus or
low carb hummus
Directions
- Rub salmon with dried basil, crushed red pepper flakes, and 1 clove garlic. Let it rest for a few minutes.
- Add chopped cabbage in a large bowl and massage with lemon juice. Add lettuce, basil, olive oil, feta cheese and 1 clove of minced garlic. Mix to well combined and season with salt and pepper, if needed.
- Heat 1 tbsp. olive oil in a non-stick pan over medium-high heat. Add broccoli and stir fry for 2 minutes. Turn off heat and covered with a lid for a few minutes. Remove and set aside.
- Add salmon to skillet. Cover with a lid and cook over medium/medium high; flipping half-way through, for 6-7 minutes.
- To assemble, divide salad among 2 serving bowls. Tops with salmon, olives, hummus and broccoli. Season with salt and pepper to taste, if needed.
- Serve immediately!
