Ingredients

  • 1 1/2 pounds small (1 to 1.5-inch diameter) potatoes, cut in half

  • 1 tablespoon oil

  • 1 cup parmesan, grated

  • 1 tablespoon oil

  • salt and pepper to taste

Directions

  • Preheat an oven to 400F/200C.
  • Brush the bottom of a baking dish with oil and sprinkle on parmesan.
  • Toss potatoes with oil, salt and pepper. Place on baking dish over parmesan, cut side down.
  • Roast until parmesan is nice and golden brown and potatoes are tender, about 20-25 minutes.
  • Remove from oven, let it cool for 5 minutes and breaking them apart.
  • Serve immediately!
