Low-carb Eggplant Pizza

If you have no idea for what to make with eggplant, just give this Low-Carb Eggplant Pizza a try. It’s loaded with all flavors of a pizza yet served in an eggplant slice (as the crust). This recipe purposely comes to me when I’m chatting with other “chefs-of-home” on a group chat. My friend recommends me this as it gets her family hooked. I do not hesitate to give it a go and omg, it actually works. My family all love it!

This eggplant pizza is easy to make. Eggplant is sliced lengthwise, rubbed with olive oil, sprinkled with salt and pepper, and baked until hot and start to cook. Eggplant slices are next stuffed with cooked onion and spinach mixture, sprinkled with shredded mozzarella, followed by chopped oregano. Finally, they are baked until cooked through and cheese is melted and bubbly. Coming out tasty and flavorful, they’re enough to make the meal more complete.

Along with ground chicken, ground beef, cauliflower rice, coconut flour, almond flour and cheese, eggplant is a tasty and healthy crust for pizza. The point here is that it’s still tasty and flavorful. To enjoy a better taste, you can drizzle your pizza with a favorite sauce and serve it alongside baked, grilled or roasted meat. Enjoy!

Ingredients

  • 1 large eggplant

  • 1/2–1 cup no sugar added pizza sauce

  • 1/2 yellow onion, sliced

  • 1 cup fresh baby spinach

  • 3/4 cup shredded mozzarella cheese

  • 1 tbsp. olive oil

  • 2 garlic cloves, minced

  • ¼ cup chopped fresh oregano

  • sea salt, to taste

  • ground pepper, to taste

  • crushed red pepper (optional)

Directions

  • Preheat oven to 400°F. Prepare a baking sheet line with parchment paper.
  • Slice eggplant lengthwise, about 1/4-1/3 inches thick. Brush or rub a little olive oil and place on baking sheet. Sprinkle with salt and pepper.
  • Bake for 7-10 minutes, or until eggplant is hot and starting to cook down.
  • Heat 1/2 tbsp. olive oil in a skillet over medium-high heat. Add garlic and onion, sauté until soft, about 3-4 minutes. Season with salt and pepper.
  • Add pizza sauce and spinach, cook for 1-2 additional minutes until mixture is warm and spinach is wilted.
  • Remove eggplant from oven, top each with onion and spinach mixture. Sprinkle with cheese and chopped oregano.
  • Bring back to oven and bake for another 5 minutes, or until cheese is melted.
  • Garnish with more fresh oregano and crushed red pepper.
  • Serve immediately!
