3 peppers
1/2 pound breakfast sausage, cooked
1/2 cup cheese, shredded
1 clove garlic, minced
1-2 chopped green onions (2 tablespoons)
salt and pepper for taste
Directions
- Pre-heat oven to 350 degrees F.
- Cut peppers in half lengthwise, remove seeds, cores and membrane.
- Add a pinch of salt and pepper into each half. Bake in preheated oven for 20 minutes.
- Add sausage and garlic in a pan and brown. Set aside.
- Once peppers are done, stuff with sausage mixture; using a spoon. Top with shredded cheese, and a pinch of chopped green onion.
- Crack and egg over top of each pepper half. Bake for another 15-20 minutes, until whites of eggs are fully cooked.
- Remove from oven, let cool for 5 minutes and serve!
