4 medium zucchini
1 pound raw chicken breast
1/2 cup Mexican blend cheese
3 strips bacon, cooked and chopped
1/2 cup ranch dressing
1 clove garlic, minced
salt and pepper to taste
Directions
- Preheat oven to 400 degrees F. Prepare a 13×9 baking pan and set aside.
- Add chicken in a medium pot, bring to a boil until it reaches an internal temperature of 165 degrees. Remove, let cool a bit and shred with two forks.
- Add chicken, bacon, garlic, ranch, salt, and pepper in a large mixing bowl. Stir to well combine.
- Slice zucchini in half, lengthwise. Remove seeds; using a spoon. Place zucchini on baking pan.
- Scoop chicken mixture into zucchini mixture. Sprinkle with cheese on top.
- Cover pan with aluminum foil and bake for 20 minutes. Remove foil and bake for 5 minutes more.
- Serve!
