Creamed Spinach–Stuffed Salmon
Need something to make your salmon meal more appealing? This Creamed Spinach-Stuffed salmon is the way to go. Salmon is sliced a slit to form a pocket, filled with a delicious mixture of cream cheese, mozzarella, spinach, garlic powder, and red pepper flakes in the pocket. It’s then seared on pan until crispy and cooked to. To best serve, it’s drizzled with butter and squeeze lemon juice on top. Who can resist? I know that I can’t.
I first tried this salmon 2 months ago at dinner at my sister’s house. She is now a full-time mom, cooking lover and blogger. She treated us with this, along with fresh lettuce salad, roasted asparagus, and white rice. Each can choose a preferred side dish to have a complete meal. I ate this spinach stuffed salmon with roasted asparagus and had a good meal. The salmon was tasty and loaded with flavors, making my taste buds satisfied. Yummy!

Ingredients
4 (6-oz.) salmon fillets
1/2 (8-oz.) block cream cheese, softened
1/2 cup shredded mozzarella
1/2 cup frozen spinach, defrosted
1/4 tsp. garlic powder
Pinch of red pepper flakes
Juice of 1/2 lemon
2 tbsp. extra-virgin olive oil
2 tbsp. butter
Kosher salt
Freshly ground black pepper
Directions
- Season salmon with salt and pepper. Set aside.
- Add cream cheese, mozzarella, spinach, garlic powder, and red pepper flakes to a bowl. Whisk to combine.
- Slice a slit in each salmon to create a pocket; using a paring knife. Spoon cream cheese mixture into pockets.
- Heat oil in a large skillet over medium heat. Add salmon, skin side down and sear for about 6 minutes, then flip over.
- Add butter and squeeze lemon juice all over. Cook until skin is crispy, 6 minutes more. Serve warm!
