Creamy Tuscan Garlic Salmon

I love this Creamy Tuscan Garlic Salmon! Since my sister recommended it for me, I’ve fallen for it right. It’s a beloved food of my family for Friday’s dinner. Eating it with white rice, quinoa, pasta, noodles or steamed vegetables would be perfect. We prefer serving it over a bed of pasta. They both pair perfectly with each other, then, offer a delicious and nutritious meal.

This Tuscan salmon is also WAY easier to make than you think. Salmon is seasoned with salt and pepper, seared until cooked to your desire, then arranged on a serving plate with drizzles of a creamy thicken sauce. It’s a mix of onion, white wine, sun-dried tomatoes, half and half, spinach leaves, and parmesan cheese. Pouring over cooked salmon, it makes salmon savory and flavorful. This Tuscan salmon is also WAY easier to make than you think. Salmon is seasoned with salt and pepper, seared until cooked to your desire, then arranged on a serving plate with drizzles of a creamy thicken sauce. It’s a mix of onion, white wine, sun-dried tomatoes, half and half, spinach leaves, and parmesan cheese.

Ingredients

  • 4 salmon fillets, skin off (or Trout or any white fish)

  • 1 small yellow onion, diced

  • 1/3 cup dry white wine (OPTIONAL)

  • 5 ounces jarred sun dried tomato strips in oil, drained of oil

  • 1 3/4 cups half and half

  • 2 teaspoons olive oil

  • 2 tablespoons butter

  • 6 cloves garlic, finely diced

  • 1 tablespoon fresh parsley, chopped

  • Salt and pepper, to season

Directions

  • Heat oil in a large skillet over medium-high heat. Season salmon filets with salt and pepper on all sides.
  • Place salmon in skillet, flesh side down, and sear for 5 minutes on each side, or until cooked to your liking. Remove and set aside.
  • Melt butter with remaining juices. Add garlic and fry until fragrant, about 1 minute. Add onion and cook for another minute.
  • Pour in white wine (if using), and reduce heat to low. Add sun dried tomatoes and fry for 1-2 minutes to release their flavors.
  • Stir in half and half (or heavy cream), and bring to a gentle simmer; stirring occasionally. Season with salt and pepper to taste.
  • Add in spinach leaves and cook until wilt. Stir in parmesan cheese and let simmer . until meted in sauce.
  • Return salmon to pan. Sprinkle with parsley, and spoon sauce over each filet.
  • Serve over pasta, rice or steamed vegetables. Enjoy!
