Crispy Low Carb Keto Cauliflower Bites

2 oz. cauliflower, cut into bite sized pieces (about 1/2 large cauliflower head)
Cooking oil for frying
- For Egg Wash
2 large eggs whisked
2 tbsp. heavy cream
- For Breading
1 cup superfine blanched almond flour
1 cup finely grated parmesan cheese
1/4 tsp smoked paprika
1 tsp garlic powder
1/4 tsp cayenne pepper (optional)
Directions
- Whisk eggs with heavy cream in a small bowl. Set aside.
- Combine almond flour, cheese, garlic powder, smoked paprika and cayenne pepper in a medium bowl. Set aside.
- Prepare a medium baking sheet lined with parchment paper. Spoon a small amount of breading onto sheet pan.
- Working by one, dip cauliflower pieces in egg wash, then dredge into flour mixture.
- Place breaded cauliflower, in a single layer, on baking sheet. Spoon a small amount of breading over cauliflower; pressing to fully coated with your fingers.
- Repeat with remaining cauliflower.
- To Deep Fry
- Heat 1 1/2 inches of cooking oil into a pot over medium-high heat. Add breaded cauliflower pieces and fry until crisp and golden brown on all sides.
- Remove from oil and place onto a plate lined with paper towel to drain. Repeat with remaining cauliflower.
- To Air Fry
- Spray basket of an air fryer with cooking oil.
- Place cauliflower, in a single layer, into basket, spacing them about 1/2 inch apart. Lightly spray surface with oil. Set air fryer to 375F. Cook for about 12 minutes or until crispy.
- To Bake
- Preheat oven to 400F. Prepare a baking sheet lined with parchment paper.
- Place cauliflower pieces, in a single layer, on baking sheet, spacing about 1/2 inch apart. Spray surface with cooking oil spray. Bake for about 20-25 minutes or until cauliflower coating is crispy.
