1 1/2 pounds small (1 to 1.5-inch diameter) potatoes, cut in half
1 tablespoon oil
1 cup parmesan, grated
1 tablespoon oil
salt and pepper to taste
Directions
- Preheat an oven to 400F/200C.
- Brush the bottom of a baking dish with oil and sprinkle on parmesan.
- Toss potatoes with oil, salt and pepper. Place on baking dish over parmesan, cut side down.
- Roast until parmesan is nice and golden brown and potatoes are tender, about 20-25 minutes.
- Remove from oven, let it cool for 5 minutes and breaking them apart.
- Serve immediately!
