Ground Beef and Onion Stuffed Peppers

4 large green bell peppers
1 lb of ground beef or turkey
1 cup of cooked rice
1 tbsp. chopped onion
1 – 1 1/2 cup shredded mozzarella cheese
1 can tomato sauce (15oz.)
1 tsp. salt
1/8 tsp. garlic salt
Directions
- Preheat oven to 350 degrees F. Prepare a small baking dish (8×8).
- Cut a circle around top of the pepper. Remove, and scoop out seeds and membranes; using a spoon.
- Add peppers to a pot of water. Bring to a boil and cook for 5-7 minutes. Remove and drain.
- Brown ground beef (or turkey) in a large skillet until cooked through; crumbling as you cook.
- Add in onion and cook until softened. Drain fat.
- Mix in 1/4 – 1/3 cup of cheese.
- Stir in rice, salt, garlic salt and 1 cup of tomato sauce until combine. Cook until all is hot.
- Scoop 2-3 spoons of beef mixture into peppers. Stand upright in baking. Pour remaining sauce over top of peppers.
- Cover baking dish with foil and bake for 45 minutes.
- Remove foil, sprinkle with cheese and continue to bake until cheese is melted.
- Garnish with parsley, if desired. Serve!
