Gyudon (Japanese Beef Noodle Bowl)

1 pound beef, thinly sliced
4 cups cooked white rice (short grain or medium grain preferred)
4 eggs
2 tablespoons mirin
2 tablespoons soy sauce
1 cup dashi stock (or beef or chicken stock)
1 scallion, chopped
2 medium onions, thinly sliced
2 teaspoons sugar
Neutral oil, vegetable or canola oil
2 teaspoons toasted sesame seeds (optional)
Directions
- Heat 2 tablespoons oil in a large skillet over medium high heat. Add onion and cook for about 10 minutes, stirring often.
- Add beef and sugar, stir-fry until beef is slightly browned.
- Stir in mirin, soy sauce, and stock. Bring to a simmer, and cook for about 10-15 minutes until gets your desired thickness. Taste for seasoning, if needed.
- Heat another couple tablespoons of oil in a cast iron or non-stick skillet. Crack eggs and cook until yolks are still runny.
- To assemble, divide the rice between 4 bowls. Top each with beef and an egg. Garnish with chopped scallion and toasted sesame seeds, if preferred.
- Serve immediately!
