Honey Lime Sriracha Chicken Poppers

2 chicken breasts
1 cup flour
3 eggs, beaten
2 teaspoons salt
1 teaspoon pepper
3 cloves garlic, minced
½ teaspoon ground ginger
Oil for, frying
- For Sauce
⅓ cup honey
½ cup sriracha
2 tablespoons soy sauce
3 teaspoons lime juice
5 tablespoons butter
Directions
- Cut chicken breasts into cubes. Combine with salt, pepper, garlic, and ginger in a medium bowl. Toss until evenly coated.
- Place flour and beaten eggs into two separate bowls.
- Dip each chicken piece in flour, then in eggs until fully covered. Return to flour and coat well.
- Heat oil in a large pot over medium-high heat (to 375°F/190°C).
- Carefully drop coated chicken, in batches, and fry until golden and cooked through, about 10 minutes.
- Add butter, honey, Sriracha, soy sauce, and lime juice in a saucepan, and heat over medium heat. Add chicken and stir until completely covered.
- Drizzle with ranch, blue cheese, or honey. Serve!
