Honey Mustard Salmon in Foil

- For Salmon
2 pound side of salmon, boneless and skinless
1 tbsp. finely-chopped fresh parsley leaves
1 batch honey mustard sauce
- For Honey Mustard Sauce
1/3 cup whole grain mustard
1/4 cup honey
2 tbsp. fresh lemon juice
1/4 tsp smoked paprika
4 cloves garlic, peeled and minced
1/8 tsp black pepper
1/4 tsp Kosher salt
Directions
- To Make Honey Mustard Salmon In Foil
- Heat oven to 375°F. Or heat a grill to medium heat.
- To make honey mustard sauce, gather all ingredients in a bowl and whisk to combine. Set aside.
- Line a large baking sheet with a large sheet of aluminum foil. Grease with cooking spray. Place salmon in middle of foil.
- Spread honey mustard sauce on top of salmon evenly. Make sure that sauce covers top of salmon.
- Fold sides of aluminum foil up and over top of salmon until it is completely enclosed.
- To Cook In The Oven
- Bake for 14-15 minutes, or until salmon is almost completely cooked through.
- Remove from oven, carefully open and pull back aluminum foil so that top of salmon is completely exposed.
- Change oven setting to broil, return salmon to oven and broil for 2-3 minutes. Make sure that sauce does not burn.
- To Cook On The Grill
- Carefully place packet of salmon onto grill, and grill for 12-14 minutes, or until salmon is almost completely cooked through. (may be longer, depending on thickness of salmon.)
- Carefully open and pull back aluminum foil so that top of salmon is completely exposed. Continue to grill for 3-4 minutes, until the fish is cooked through.
- Remove from grill. Sprinkle evenly with parsley, and serve immediately.
Notes
- If you are a big fan of mustard, feel free to increase the mustard amount to 1/2 cup, and/or scale back a bit on the honey. It tastes crazy good!
