Keto Supreme Pizza Stuffed Peppers

4 large bell peppers (red, orange, yellow, green), halved, ribs and seeds removed
1 1/2 cups shredded mozzarella cheese
2 ounces pepperoni slices
2 ounces Canadian bacon slices
4 button mushrooms, sliced
1 cup Low Carb Pizza Sauce
1/2 cup grated Parmesan cheese
1 tablespoon Italian seasoning
10 black olives, sliced
1/3 cup diced onion
Directions
- Preheat oven to 400°F. Prepare a baking sheet lined with parchment paper.
- Place peppers face up on baking sheet and bake on middle rack for 15 minutes. Once done, remove and drain any excess moisture.
- To assemble, sprinkle 1 tablespoon of mozzarella into bottom of each pepper half, followed by 2 tablespoons of pizza sauce.
- Top evenly with pepperoni, Canadian bacon, mushrooms, olive and onion.
- Sprinkle with 2 tablespoons of mozzarella cheese.
- Return to oven and bake on top rack for another 10 minutes.
- Remove and top each with 1 tablespoon of Parmesan and a sprinkle of Italian seasoning.
- Bring back to oven and broil 5 minutes.
- Serve!
