5 medium chicken breasts
1 cup ricotta
1/2 cup parmesan
1 cup mozzarella
1 egg
2 cups marinara
1 tablespoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
fresh basil, to serve
Directions
- Preheat oven to 400 degrees F.
- Add ricotta, parmesan, egg, Italian seasoning, salt and pepper to a bowl. Whisk to combine and set aside.
- Generously season chicken breasts with salt and pepper. Gently pat to adhere. Slice in half to form a “pocket”.
- Place a spoonful of marinara in each chicken breast. Spread to make an even layer; using back of a spoon.
- Scoop even amount of lasagna stuffing into each chicken breast. Cover with remaining marinara. Sprinkle with mozzarella over top.
- Bake in preheated oven for 35 minutes, until chicken is cooked through and no longer pink.
- Garnish fresh basil. Serve immediately!
