15oz. can chickpeas, drained and rinsed
1/2 tablespoon melted coconut oil
kosher salt
freshly ground black pepper
Directions
- Preheat oven to 400°F convection roast.
- Spread chickpeas out on a dish lined with a paper towel, gently pat dry.
- Peel skins off chickpeas. Spread out on a baking sheet and roast for 10 minutes, shaking once so they don’t stick.
- Remove chickpeas and pour coconut oil mixture over top. Season with salt and pepper, toss to evenly coated.
- Bring baking sheet back to oven and roast for 12 minutes more, tossing once half way through.
- Turn oven off, let chickpeas cool in oven cool with baking sheet still for at least 10 minutes.
- Serve immediately!
