Sausage and Mozzarella Stuffed Zucchini

4 medium zucchini
1 pound mild Italian sausage, casings removed
3/4 cup shredded mozzarella cheese
2 cups marinara sauce
1/2 teaspoon dried Italian seasoning
1/2 cup onion, finely diced
1 teaspoon minced garlic
1 tablespoon chopped parsley
2 teaspoons olive oil
salt and pepper to taste

Directions
- Preheat oven to 400 degrees F. Spray a large rectangular baking with cooking spray.
- Slice zucchini in half, lengthwise. Trim off stem ends, and carefully scoop flesh out; using a spoon.
- Sprinkle zucchini halves with Italian seasoning, salt and pepper. Place onto baking dish.
- Heat olive oil in a large pan over medium high heat. Add sausage and cook for 4-5 minutes, breaking apart with a spatula.
- Stir in onion and cook for more 4 minutes, until softened. Add garlic and cook for 30 seconds more. Season with salt and pepper to taste.
- Pour in marinara sauce and bring to a simmer. Cook for 5 minutes.
- Scoop meat mixture evenly into zucchini shells. Top with shredded cheese.
- Bake in preheated oven for 25 minutes, or until zucchini is tender and cheese is melted and golden brown.
- Sprinkle with parsley. Serve!
