Sausage and Mozzarella Stuffed Zucchini

Ingredients

  • 4 medium zucchini

  • 1 pound mild Italian sausage, casings removed

  • 3/4 cup shredded mozzarella cheese

  • 2 cups marinara sauce

  • 1/2 teaspoon dried Italian seasoning

  • 1/2 cup onion, finely diced

  • 1 teaspoon minced garlic

  • 1 tablespoon chopped parsley

  • 2 teaspoons olive oil

  • salt and pepper to taste

Directions

  • Preheat oven to 400 degrees F. Spray a large rectangular baking with cooking spray.
  • Slice zucchini in half, lengthwise. Trim off stem ends, and carefully scoop flesh out; using a spoon.
  • Sprinkle zucchini halves with Italian seasoning, salt and pepper. Place onto baking dish.
  • Heat olive oil in a large pan over medium high heat. Add sausage and cook for 4-5 minutes, breaking apart with a spatula.
  • Stir in onion and cook for more 4 minutes, until softened. Add garlic and cook for 30 seconds more. Season with salt and pepper to taste.
  • Pour in marinara sauce and bring to a simmer. Cook for 5 minutes.
  • Scoop meat mixture evenly into zucchini shells. Top with shredded cheese.
  • Bake in preheated oven for 25 minutes, or until zucchini is tender and cheese is melted and golden brown.
  • Sprinkle with parsley. Serve!
